  • Water or broth: 2 cups

Step-by-Step Instructions

1. Prepare the Matoke

  • Peel the matoke carefully to avoid staining your hands (you can use gloves or apply oil to your hands).
  • Cut the peeled bananas into halves or chunks and place them in a bowl of salted water to prevent browning.

2. Sauté Aromatics

  • Heat 2 tablespoons of oil in a large pot or pan over medium heat.
  • Add the chopped onion and sauté until golden brown.
  • Stir in the minced garlic and grated ginger, cooking until fragrant.

3. Add Vegetables
